Heat causes the chemical reactions that result in the characteristic coffee flavor. Each roaster has their preferences for how this is done. Some have a specific heating technology that they implement, using different types of mechanical roasters or relying on various wood types to give the coffee a special flavor.

The amount of time in which the coffee is roasted is another area of contention. From there, roasters cool coffee in different ways, either out in the open or in a container. Here too, time is a factor in sealing in specific flavors caused by the trapping and releasing of carbon dioxide and various acids.
