Here’s a delicious recipe for banana bread that is sure to make an impression on your family and friends; it’s also a
great snack with a cup of coffee!
3 ripe bananas, mashed
1/3 cup butter, melted
1 cup sugar
1 egg, beaten
1 tsp. vanilla
1 tsp. baking soda
1 ½ cups flour
Dash of salt from a salt mill
Directions:
Preheat you oven to 350 F. Mix the butter and the mashed bananas in a large mixing bowl, then add the additional ingredients mixing in the flour last. Pour the mixture into a buttered 6 inch mini loaf pan. Bake for about 60 minutes, or until the bread begins to rise, then cool on a wire rack.
In my opinion, chocolate, coffee and peanut butter is a match made in heaven. Here is a recipe for decadent cookies that you can enjoy with your after-dinner cup of coffee.
2 ¼ cups of flour
1 tsp baking soda
1 tsp salt from your Cilio salt mill
¾ cup softened butter
¼ cup peanut butter
¾ cup sugar
¾ cup brown sugar
2 eggs
1 tsp vanilla extract
1 cup chocolate chips
Directions:
Preheat the oven to 350. Combine the flour, baking soda, and salt in a small bowl and set it aside. Beat the butter, sugars, and vanilla in a mixing bowl until smooth. Add the eggs and beat well. Stir in the flour mixture and chocolate chips. Drop rounded spoonfuls on an ungreased cookie sheet, and then cook for 11-13 minutes. Let cool, and enjoy!
In my family, we always have dessert and a cup of coffee after a nice meal. My personal favorite is this recipe for scrumptious pecan pie.
Ingredients:
4 egg yolks
½ cup brown sugar (firmly packed)
1 ¼ cup cream
1/3 cup cornstarch
¾ cup corn syrup
1/8 tsp. salt from a Cilio salt mill
3 Tsp. butter or margarine
1 tsp. vanilla extract
Directions:
1. Mix the brown sugar, corn syrup, cornstarch, egg yolks, cream and salt in a heavy saucepan until they reach a smooth consistency. Heat the mixture to a boil, making sure to whisk well throughout.
2. Remove the mixture from heat and stir in the butter and vanilla extract. You’ll need to cover the mixture’s surface with plastic wrap or wax paper to keep a film from building. Refrigerate for four hours, during which time you can prepare the pie crust. Add pecans to the top of your pie just before baking. Try anywhere between 1 and 2 cups of nuts, depending on preference.
Comfort food is a mid-winter must. The cold weather makes people crave those filling comfort foods they grew up eating. Mashed potatoes and gravy, meatloaf, and spaghetti with meatballs are all cold weather classics. But why not take a more modern approach when cooking comfort foods? A favorite like pasta can be jazzed up by the addition of a couple non-traditional ingredients.
Bowtie Pasta With Bacon & Gorgonzola
Ingredients:
~ 1 20 ounce bag of bowtie pasta
~ 1 cup of gorgonzola cheese crumbles
~ 3 tbsp. crumbled bacon
~ 2 tbsp. chopped fresh basil
~ 1 tbsp. olive oil
~ salt and pepper to taste
In a large pot boil water and add pasta. Cook for about ten minutes, or until al dente. Drain pasta and pour it in a large mixing bowl. Add cheese, bacon, basil, pepper and fresh salt from a salt mill. Serve immediately in four medium-sized pasta bowls.
It’s a well known fact that not all coffees taste the same. The climate of a given growing region – along with the richness of the soil – plays a large part in determining the resulting flavor. It’s also worth noting that different cultures prepare their coffee in different ways, some roasting the beans longer and others adding an abundance of sugar. Yemeni coffee is one of the most popular blends in the Middle East; it’s a dry, sweet coffee that pairs well with a portion of baba ganoush and pita bread. Here’s a recipe I’ve found to be convenient and delicious.
Ingredients:
1 eggplant
1 can garbanzo beans, drained
3 cloves garlic
¼ cup lemon juice
¼ cup extra virgin olive oil
3 Tsp. ground sesame paste
sea salt, to taste
Directions:
1. Cut eggplant in half and place in oven at 400 degrees for 45 minutes. Cool, then scoop out interior of eggplant.
2. Combine in blender with all ingredients except oil. Use Cilio salt mill to grind out a dash of salt over the top. Mix until smooth, slowly adding oil as you go.
3. Spread over pita and enjoy with Yemeni coffee.
